The Guinness cake or Guinness cake is a soft and delicious chocolate cake , with the characteristic aftertaste of the famous Irish beer . Typically, it is a chocolate cake made with butter, brown sugar, eggs and, of course, beer. In the traditional recipe it is filled with a delicious cream prepared with mascarpone, spreadable cheese and powdered sugar.
Preparing it is very simple and, at the first taste, it will be like being catapulted into a characteristic Irish coffee during the holidays of St. Patrick . It is in itself a very caloric cake, so do not overdo the doses and, for the filling, avoid excessively fat creams. Calories aside, the result is delicious. If you are curious to try it, fasten your apron and get to work.
How to prepare the Guinness cake
In a bowl for a planetary mixer, sift the 00 flour with the baking powder and the bitter cocoa.
Pour the softened butter at room temperature into a bowl with the brown sugar and mix well with the whisk of the planetary mixer or with an electric mixer, until creamy.
Add the eggs to the mixture, incorporating them one at a time and mix. Add the sifted powders a little at a time and, finally, the Guinness beer poured slowly, continuing to mix.
Wrap a round, openable cake pan with a diameter of about 22-24cm with parchment paper and grease. Pour the mixture by leveling it with a spatula. Bake at 180 degrees for about 1 hour.
Let the cake cool and in the meantime prepare the cream for the filling. Work the mascarpone with the spreadable cheese and the icing sugar. Mix well with a whisk to obtain a creamy mixture.
Cut the cake in half with a knife and fill with the cream. Reassemble it and decorate with the same filling on the surface, creating tufts that resemble beer foam.
Advice
To fill the Guinness cake you can prepare the cream of your choice. In this version we have prepared a mascarpone filling, but you can divide the quantities and use 200g of mascarpone 2 300g of whipped cream, or some chantilly cream. Avoid high calorie preparations to avoid making the cake too heavy.
Filling the cake with the cream inside is optional. Alternatively, you can also not cut the cake and pour the filling into flakes only on the surface, or serve it directly next to the slice of cake on the plate. This way, the cream-free cake will keep even longer.
Storage
Guinness cake can be kept for up to 3 days, well covered in the refrigerator. Due to the mascarpone filling, it is not recommended to keep it at room temperature for several days.
